peanut butter & banana pancake sandwiches (gluten free!)

Exactly around this time last year I decided I wanted to attempt a triathlon. I wish I knew what planted this seed because, to be honest, at the time I didn’t know anyone in my social circles stupid enough to be investing in this $port. (That I knew of anyway.) So, I did some research and put my money on the Boston Tri: a 1/2 mile swim, a 9 mile ride and a 4.4 mile run.

No one tells you this, but triathlons are much like tattoos; a lot of people have one or two, but you never see anyone with just three.

So here I am a veteran of two sprint triathlons and one Olympic Distance triathlon all completed roughly within the span of a month (with one more sprint next weekend to end the year).

I definitely did not see this coming.

Anyway… the day before my OD distance tri I decided I wanted to have my pre-race meal ready-to-go in the morning. There are many things one should and should not eat before a race… my solution might not be for everyone, but I think the concept of a Peanut Butter-banana-chocolate chip-blueberry-gluten-free pancake sandwich not only sounds amazing… I can tell you, it is amazing. Most importantly, it aptly fueled my near one mile swim, 40k ride and 10k run.

You will need

  • gluten-free pancake mix (I used Bob’s Red Mill Flour)
  • 1/4 cup chopped walnuts
  • semi-sweet chocolate chips (I used Trader Joe’s)
  • fresh blueberries
  • sliced banana
  • 1 egg (omit to make a vegan version of this recipe)
  • peanut butter

There really isn’t much to tell you that isn’t self-explanatory by my insanely dark photos thanks to the dark Victorian in which I reside.

I finely chopped the walnuts and added to the gluten-free pancake batter.

I tried to keep the pancakes “sandwich sized” on the griddle.

And then of course added the blueberries and chocolate.

A little tip: if you leave a ramekin of peanut butter on the stove as you prepare the pancakes it will become nice and melty for making the sandwiches.

And then the fun part: making the pancake sandwiches.

Slather on the peanut butter and add some banana slices.
